Where oh where is fall? It has been over 105 degrees for a few days now. The only silver lining is that nighttime temperatures drop to the mid 70s. Unfortunately, there’s no relief in sight for another week; we’re stuck in the 100 to 105 degree range for the entire week.
Why does 86 sound so much older than 85? My birthday is one day before the elections, so each day serves as a reminder of how many days until 86! We’ve been managing to go for walks every other day, but we need to start early while it’s still in the 70s. By 8:30 AM, it’s already in the mid 80s. When we stopped our walks at the beginning of summer, we were doing 3 to 3.5 miles. Now, we’re only managing 2.5 miles and sitting on benches much more than we used to. I hope it gets easier as we acclimate again.
The other day, our youngest son took us out for an early dinner at a Japanese restaurant. It had been years since we visited one where they cook right at your table. The food was amazing and there was so much of it! We both had enough leftovers for the next day, including soup, salad, teriyaki chicken and shrimp, noodles, fried rice, and vegetables. It was a fun day!
To keep myself busy, I’ve continued with diamond painting. I finished a couple of Christmas-themed pieces and I’m now working on another one.
I just finished a piece, and I wish I could figure out how to take a decent photo of them because they look so much better in person.
Bill has had several great days in a row and has been doing a lot of cooking. He first made bunuelos, which are closest to apple fritters or dumplings in English. He cut up apples and bananas, deep-fried them, and sprinkled sugar on top. Delicious! He made enough to freeze some for later.
He also made a dish he calls Tortilla, an Argentine favorite with sliced potatoes and whatever else you choose to add, such as parsley, mushrooms, peas, carrots, and onions. Everything is held together with an egg mixture. He has a special set of pans that fit together so it can be flipped halfway through cooking. He made enough to freeze one, and it was very good!
Yesterday, we watched a soccer game where Messi scored an incredible goal. Today, there’s a NASCAR race, and my favorite driver is starting in third place. Fingers crossed for a smooth race and maybe a win! That’s about all that’s happening with us.
