In 1839, August Zang, an Austrian, opened a bakery called La Boulangerie Viennoise in Paris. His offerings included Kipferl, a traditional yeast roll that quickly gained popularity. French bakers adapted this dough using yeast to create what we now know as the croissant. The Kipferl recipe made its way to Italy in the 1600s.
